Xanthum Gum Powder is milled from the dried cell coat of a laboatory-grown microorganism, Xanthomonas campestris. It is used in cosmetics to thicken lotions and creams and also in gluten-free cooking as a substitute for gluten in yeast breads and other baking with gluten-free flours.
