Vanilla beans are normally difficult to powder because of their high moisture content so the process is usually done with a carrier such as dextrose or sugar at a minimum 30%. This mixture is dried and ground to produce vanilla powder. An anti-caking agent such as aluminium calcium silicate is sometimes added at a rate of 2% by weight.
